There are as many names as there are languages but the concept is universally similar: flour, water, milk, eggs, butter, sugar, salt … Archaeological evidence suggests that pancakes were probably the earliest and most widespread cereal food eaten in prehistoric societies.

Crêpes are often considered thin pancakes. Technically, a crepe is a pancake that’s been thinned out using a cast-iron griddle and is either stuffed or folded and topped with sweet fillings. When made without sugar and non-wheat flour such as buckweat and filled with savoury fillings it’s called a Galette.

  1. Combine all ingredients in a bowl. 

  2. Mix until smooth with a whisk or mixer. 

  3. Warm up a 20cm pan with a dash of olive oil. Wipe the pan with a kitchen towel so there is no oil but the pan is greased.

  • I stash the crepes on a large dinner plate under a lid to keep them warm.
